Preheat your oven to 180°C (160°C fan) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the butter, brown sugar, and caster sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Fold in the chocolate chips until evenly distributed throughout the dough.

Cover the dough and refrigerate for at least 30 minutes (or up to 24 hours) to allow the flavors to develop.

Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 5cm apart.

Bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft.

Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
